Justin North

Justin North

Born and raised in New Zealand, Justin completed his apprenticeship and went on to work at some of the great restaurants of the world - Raymond Blanc's Le Manoir aux Quat' Saisons in the UK and three-Michelin-Star Pierre Gagnaire and Guy Savoy in Paris to name a few.

Justin returned to Sydney to work with Liam Tomlin as Sous Chef at Banc Restaurant but in 2001, he left Banc to open his own restaurant, Becasse.

Named 2009 chef of the year, Justin is also the author of two books - Becasse: inspirations and flavours, and French Lessons.

Books

Bécasse: Inspirations ad Flavours is an inspired tour around some of the finest producers in Australia, and a celebration of the inimitable flavours of these foods. Justin’s recipes take you step-by-step through dishes, to enjoy the layering of flavours in intricate meals made famous at Bécasse in your own home.

French Lesson, Justin’s second book, takes you through 24 invaluable lessons covering techniques, courses and cuisine: everything from soups and stocks to poaching and pastries.
