Our luxury villa is nestled outside the city of Ostuni where we will stay for seven nights. We will have plenty of time to spend in the kitchen with Giovanni and Alessandro learning wonderful ways to prepare the freshest of produce from the local markets.

The region around Ostuni has been inhabited since the Stone Age. The town is reputed to have been originally established by the Messapii, a pre-classic tribe, and destroyed by Hannibal during the Punic Wars. It was then re-built by the Greeks - the name Ostuni deriving from the Greek Astu néon (‘new town’).The “Old Town” is Ostuni’s citadel built on top of a hill and still fortified by the ancient walls. Ostuni is commonly referred to as ‘the White Town’ (La Città Bianca) for its white walls and its typically white-painted architecture.

During our stay we will visit artisan producers of wine, olive oil and cheese. Puglia is the home of Burrata, the fresh Italian cow milk cheese (occasionally buffalo milk) made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains stracciatella and cream, giving it an unusual, soft texture.

If Italy is the largest producer of wine in the world, it is largely thanks to Puglia, which produces more than any other Italian region, about 17% of the total!

We will visit the cities of Bari and Taranto as well as a day exploring the famous cone-shaped Truli Houses. A trullo (plural, trulli) is a traditional Apulian dry stone hut with a conical roof. Trulli generally were constructed as temporary field shelters and storehouses or, as permanent dwellings by small proprietors or agricultural labourers. In the town of Alberobello, in the province of Bari, whole districts contain dense concentrations of trulli. The golden age of trulli was the nineteenth century, especially its final decades, which were marked by the development of wine growing. After visiting local markets we will return to the villa and lots of fun cooking classic dishes of this region with Giovanni and Alessandro.
